Bornholm is the finest island in Denmark — a granite island of 40,000 people in the Baltic (115km from Copenhagen; 150km from Stockholm) with the finest sunshine record in Denmark (the sunniest island in the country; 2,100 hours of sunshine per year), the largest castle ruin in Scandinavia (Hammershus; the 13th-century fortress on the granite cliff above the Baltic), and the finest smoked herring tradition in Denmark (the “Sol over Gudhjem” — the traditional Bornholm dish of smoked herring, egg yolk, chives, and radish on rugbrød; the finest single dish unique to a Danish island).

Eating & Drinking

Bornholm eating is the most specifically regional in Denmark — the island produces its own food culture that has almost no parallel elsewhere in the country: the smoked herring (the most important single Bornholm food; the sol over Gudhjem at any Gudhjem restaurant; 90–130 DKK), the Bornholm lamb (the sheep graze on the granite heath; the most flavourful Danish lamb; 180–320 DKK for a lamb main at the Stammershalle Badehotel — the finest Bornholm restaurant), the Bornholm smokehouse sausage (the røget pølse; 35–55 DKK from the Gudhjem Røgeri), and the Svaneke Bryghus craft beer (the finest craft brewery on the island; the Svaneke pale ale and the island porter; the brewery tap in the Svaneke harbour square). The Gudhjem smokehouse (the freshest smoked herring direct from the alder-wood smoker; 45–75 DKK for 4 herring; the most affordable and the most authentic Bornholm food experience) and the Rønne Torv market (Saturday mornings; the Bornholm cheese, the smoked meats, the local pottery) are the two essential Bornholm food stops.

Tips

🚲

Cycle the island perimeter: 105km; 2 days; the best cycling in Denmark

Bornholm’s island perimeter cycle route (105km; mostly flat; marked) takes 2 relaxed days. Rent a bike in Rønne from 120 DKK/day. Book accommodation 2+ weeks ahead in summer.

Østerlars at dawn: the most dramatic round church in Scandinavia

Østerlars Round Church (the largest of Bornholm’s 4 round churches; 12th century; free entry daytime) is most atmospheric at dawn before tour coaches from Rønne arrive at 10am.

🍽

Sol over Gudhjem: order at the smokehouse; eat at the harbour wall

Sol over Gudhjem (smoked herring with raw egg yolk and chives on rugbrød; 85 DKK) is Bornholm’s defining dish.

🌞

Take the overnight ferry from Copenhagen: wake to the Bornholm coast

The Bornholmerlinja overnight ferry from Copenhagen Nordhavn (departs 11:30pm; arrives Rønne 6am; from 199 DKK) saves a night’s accommodation and arrives at dawn.
